Ingredients:
- 2 pounds of fresh mussels, scrubbed and cleaned
- 2 kiwis, peeled and diced
- 1/2 cup of white wine
- 1/2 cup of heavy cream
- 1/4 cup of butter
- 2 cloves of garlic, minced
- 1/4 teaspoon of red pepper flakes
- Salt and pepper to taste
Instructions:
- In a large pot, melt the butter over medium heat.
- Add the garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
- Add the white wine and bring to a simmer.
- Add the mussels and cover the pot. Cook for 5-7 minutes, or until the mussels have opened.
- Remove the mussels from the pot and set aside.
- Add the heavy cream to the pot and stir to combine with the remaining sauce.
- Stir in the diced kiwis and cook for an additional 2-3 minutes.
- Season the sauce with salt and pepper to taste.
- Divide the mussels into bowls and pour the kiwi cream sauce over the top.
- Garnish with additional diced kiwi and chopped parsley, if desired.
