Ingredients:

  • 2 pounds of fresh mussels, scrubbed and cleaned
  • 2 kiwis, peeled and diced
  • 1/2 cup of white wine
  • 1/2 cup of heavy cream
  • 1/4 cup of butter
  • 2 cloves of garlic, minced
  • 1/4 teaspoon of red pepper flakes
  • Salt and pepper to taste

Instructions:

  1. In a large pot, melt the butter over medium heat.
  2. Add the garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
  3. Add the white wine and bring to a simmer.
  4. Add the mussels and cover the pot. Cook for 5-7 minutes, or until the mussels have opened.
  5. Remove the mussels from the pot and set aside.
  6. Add the heavy cream to the pot and stir to combine with the remaining sauce.
  7. Stir in the diced kiwis and cook for an additional 2-3 minutes.
  8. Season the sauce with salt and pepper to taste.
  9. Divide the mussels into bowls and pour the kiwi cream sauce over the top.
  10. Garnish with additional diced kiwi and chopped parsley, if desired.
